ماهیت آن
عصارۀ برک نباتی است یمنی شبیه بعلیق و ثمر آن مانند خوشۀ انکور و دانۀ آن مانند عنب الثعلب و بعد رسیدن سرخ می کردد پس سیاه و برک آن شبیه ببرتاک و ترش و با کوشت آن را طبخ می نمایند و می خورند و عصارۀ آن را بدین قسم می کیرند که برک آن را در تنور می کذارند و چون نرم کشت رطوبت آن را افشرده منعقد می سازند و آن سیاه رنک و طعم آن ترش می باشد و بهتر از آب حب الرمان است کفته اند آب آن را در اصفر می ریزند و بعد از انعقاد و خشک شدن برمیدارند و باطراف می برند

نباتی است برک آن شبیه ببرک بستان افرز و از ان بزرک تر و مختلف الالوان و خوش منظر و در باغها با بستان افروز غرس می نمایند و مشهور بلالۀ خطائی است و در تبریز بکل عاشقان

با قوت محلله و رادعه و رافع سدۀ دماغ و زکام حادث از بلغم و ضماد برک آن جهت سوختکی آتش نافع و صاحب تقویم کفته که حرارت معده و جکر را ساکن کرداند و چون طبیخ آن را با جلاب یا سکنجبین بیاشامند معده و جکر را از اخلاط فاسدۀ ردیه پاک سازد و تخم آن مقوی دل و برشتۀ آن با روغن کل و آب سرد جهت اسهال مزمن مفید و اکثار آن مضر مثانه مصلح آن کندر مقدار شربت آن تا دو درهم بدل آن بستان افروز است و روغن آنکه آب برک آن را کرفته با روغن زیتون بالمناصفه ترتیب دهند محلل باقوت قابضه و خوردن دو مثقال آن جهت ریاح معده و طلای آن جهت ریاح اغشیۀ دماغ نافع است

حماحم . [ ح َ ح ِ ] (ع اِ) پودینه  بستانی که برگش پهنا باشد و آنرا حبق نبطی گویند. برای زکام نافع است و سده های دماغ گشاید و دل را نیرو بخشد. (منتهی الارب ) (اقرب الموارد). حماحمة یکی آن . (منتهی الارب ). و عامه آنرا حَبَق لیمونی خوانند. (اقرب الموارد). و آنرا در شام حبق نبطی گویند و بعضی بستان افروز را گفته اند. (برهان ). از اسفرمهاست . (از ذخیره  خوارزمشاهی ). حبق نبطی غیر بستان افروز است ، برگش شبیه ببرگ بستان افروز و از آن بزرگتر وساقش بدستور بسیار قوی و رنگ برگ او مختلف الالوان خوش منظر و در باغها با بستان افروز غرس مینمایند. و مشهور است به لاله  ختائی و در تبریز بگل عاشقان . در آخراول سرد و خشک و با قوه  محلله و رادع و رافع سده  دماغ و زکام ، و ضماد برگش جهت سوختگی آتش نافع و تخم او مقوی دل و برشته  او با روغن گل و آب سرد جهت اسهال مزمن مفید و اکثار او مضر مثانه و مصلحش کندر و قدر شربتش تا دو مثقال ، بدلش بستان افروز و روغن او که از آب آن و روغن زیتون بالمناصفه ترتیب داده جوشانیده تا آب سوخته و روغن مانده باشد. محلل و با قوه  قابضه و خوردن دو مثقال او جهت ریاح معده و طلای او جهت ریاح اغشیه دماغ نافع است . ریحان

اشاره

به فارسی «ریحان» و «نازبو» و در کتب طب سنتی با نام‌های «شاهسفرم» و «صعتر هندی» و «سلطان الریاحین» آمده است. به عربی «ضیمران» که در اصل «ضمیران» است و «ریحان الملک» نامیده می‌شود. به فرانسوی‌Petit basilic وBasilic و به انگلیسی‌Basil وSweet گفته می‌شود. گیاهی است از خانواده‌Labiatae جنس‌Ocymum یاOcimum نام علمی آن‌Ocimum basilicum L . و مترادفهای آن:
Ocimum caryophyllatum Roxb.
وOcimum Pilosum Willd . وO .menthaefolium Benth . است. رقم سرخ‌رنگ ریحان را در کتب طب سنتی با نام «حماحم» ذکر کرده‌اند.

مشخصات

گیاهی یکساله به بلندی 60 سانتی‌متر است. گلهای آن کوچک مایل به سبز یا ارغوانی و یا سفید می‌باشد پشت برگهای آن سبز خاکستری و روی برگهای جوان آن سبز روشن به شکل بیضی، نوک‌تیز با دندانه‌های ریز و معطر است. تخم آن سیاه، ریز کمی زبر می‌باشد. تکثیر آن با کشت تخم آن بسادگی انجام می‌شود. ریحان بومی فلات ایران است و در ایران و افغانستان به‌طور خودرو می‌روید ولی عملا تولید فعلی آن در ایران صددرصد از پرورش و کشت آن در مزارع حاصل می‌شود. در ایران به طور وحشی در اطراف تهران، همدان، خراسان، در 2300 متر ارتفاع از سطح دریا و

در کرمانشاه، در ارتفاعات 1500 متری و در خرمشهر و بلوچستان و در آذربایجان در اطراف تبریز می‌روید.

ترکیبات شیمیایی

از نظر ترکیبات شیمیایی در اسانس گیاه ریحان سبز مواد اوسیمن 144]، پی‌نن 145]، ترپن‌هایدرت 146]، سینئول 147]، و متیل چاویکول 148]، لینالول 149]، آنتول 150]، اوژنول 151]، [والنزوئلا]، استراگول 152] [وان‌استی‌نیس- کروزمان ، تی‌مول 153]، سیترال 154] و کامفور[155] وجود دارد [شوالیه .
در گزارش بررسی دیگری، ترکیبات شیمیایی ریحان چنین بیان شده است:
گیاه دارای اسانس روغنی فرار است. گیاه تازه در حال گل کردن اسانسی دارد که شامل تعدادی الکل نظیر لینالول که 65 درصد اسانس را تشکیل می‌دهد و به علاوه در اسانس آن سینئول و اوژنول و سسکی‌ترپن 156] و دی- ترپن 157] یافت می‌شود. گیاه رسیده در حدود 4/ 0 درصد اسانس روغنی فرار دارد. برگهای آن در حدود 5/ 0 درصد اسانس دارد که شامل 6/ 56 درصد متیل سینامات 158] و 36/ 4 درصد ال- لینالول 159] و 80 درصد ترپینن 160] است. خواص- کاربرد

ریحان از نظر طبیعت کمی گرم و خشک است بازکننده گرفتگی‌های دماغی و محلل ورمهای جمیع اعضا و برای ضعف معده و بادهای غلیظ مفید است. عصاره آن با شکر برای رفع درد سینه و تنگی‌نفس و سرفه و مضمضه و جویدن آن برای زخمهای دهان و بوییدن آن برای رفع سردرد گرم‌مزاجان نافع است. کوبیده تخم ریحان با صمغ عربی برای قطع شکم روش نافع است و جوشانده 40 گرم در هزار گرم آب آن نیز برای اسهال نافع است که خورده شود.
در کشورهای افریقایی از برگ و سرشاخه‌های ریحان به صورت حمام گرم در موارد سرطان معده استفاده می‌کنند.

در خاور دور

در چین از برگهای ریحان(O .basilicum) به عنوان تونیک، مقوی، بادشکن و کمک به تقویت هاضمه استفاده می‌شود. از جوشانده برگهای آن برای شست‌وشوی زخم و جراحت استفاده می‌کنند، ضمنا برای قی کردن و سکسکه و پلیپهای بینی نیز تجویز می‌شود. تخم ریحان برای معالجه ناراحتی‌های چشم و زخمهای خورنده که کم‌کم پیش می‌روند و نسج را از بین می‌برند و معمولا در زاویه خارجی چشم در قسمت فوقانی بینی ظاهر می‌شوند توصیه و تجویز می‌شود. [استوارت . در هندوچین از خاکستر ریشه ریحان برای رفع ناراحتی‌های پوستی استفاده می‌شود [پتلو]. گیاه به طور کلی معطر و محرک است و قابض و بندآورنده اسهال خونی و برگهای آن تب‌بر می‌باشد [می‌نات . دم‌کرده تخم ریحان مسکن است و درجه حرارت بالای بدن را کاهش می‌دهد. در تمام خطه تایوان، هندوچین و فیلیپین از تخم ریحان به عنوان ملین استفاده می‌شود و برای رفع یبوست مزاج تجویز می‌شود [پتلو]. شیره برگهای ریحان یا گلهای آن برای قطع سرفه تجویز می‌شود [برکیل و هانیف . جوشانده تخم ریحان را پس از زایمان به عنوان قاعده‌آور [برکیل . و تب‌بر [برکیل و هانیف . می‌دهند. تخم ریحان یک پوشش لعابدار دارد که در آب، تولید نوعی لعاب و ژله می‌کند که نرم کننده و محرک و مدر و معرق است و در چین به عنوان خنک‌کننده نیز مصرف می‌شود [برکیل و هانیف .
در اندونزی تخم ریحان به عنوان ملین خورده می‌شود و در لیموناد می‌ریزند و برای رفع دل‌درد می‌خورند. از برگهای آن به عنوان ضد اسپاسم و بادشکن و مسکن و آرام‌کننده استفاده می‌شود [وان‌استی‌نیس- کروزمان .

در فیلیپین مانند سایر مناطق خاور دور استفاده می‌شود. در هندوستان از گل ریحان به عنوان بادشکن و مدر استفاده می‌کنند. تخم آن را که لعابدار است به صورت دم‌کرده در موارد سوزاک و اسهال خونی و اسهال مزمن می‌خورند. از شیره برگهای آن مخلوط با عسل در موارد خناق(Croup) استفاده می‌شود.
گونه دیگری از ریحان به نام‌Ocimum sanctum L می‌باشد. این‌گونه در مناطق مختلفه آسیا کاشته می‌شود و شاید هم به‌طور خودرو می‌روید. بومی جزایر اوقیانوسیه است. در چند گزارش آمده است که در جنوب ایران در بلوچستان نیز به‌طور وحشی می‌روید. گیاهی است چندساله برگهای آن کرکدار، بیضی‌شکل و دندانه‌دار است.
از نظر ترکیبات شیمیایی در گزارش در]M .P .E .SE .A[ چنین آمده است:
دارای اسانس روغنی فرار است که شامل متیل چاویکول، سینئول، لینالول، متیل هومو انیسیک اسید[161]، کاریوفیلن 162]، اوژنول، اوژنول متیل اتر[163] و کارواکرول 164] می‌باشد [والنزوئلا]. در لعاب دانه‌های آن مواد هکزورونیک اسید[165]، پنتوز[166]، خاکستر مشخص شده و پس از هیدرولیز معلوم شده که دارای کسیلوز[167] می‌باشد وجود دارد.

در گزارش دیگری آمده است که برگهای این ریحان دارای 7/ 0 درصد اسانس روغنی فرار است که شامل 71 درصد اوژنول 2/ 3 درصد کارواکرول و 20 درصد متیل اوژنول و 7/ 1 درصد کاریوفیلن است.
از نظر خواص و کاربرد گونه‌O .sanctum معروف است که کمی تب‌بر و بادشکن است و برای قطع اسهال بچه‌ها مؤثر است. از تخم آن برای معالجه بیماری‌های کلیه استفاده می‌شود [تئوبالد]. در هندوچین دم‌کرده یا جوشانده آن برای آفتابزدگی و وبا و خونریزی از بینی و استسقا به کار می‌رود و ضمنا در برخی آفتابزدگی‌ها و تبهای شدید تخم آن را می‌سوزانند و از دود آن برای کمک به تنفس بیمار استفاده می‌کنند.
شاخه‌های سبز و تازه این ریحان را برای تسکین سردرد روی شقیقه‌ها می‌گذارند [فوکود]. از لعاب نرم‌کننده دانه‌های آن برای بیرون آوردن گرد و خاک و خاکستر از

چشم استفاده می‌شود [پتلو]. در شبه‌جزیره مالایا از دم‌کرده برگهای آن برای معالجه اختلالات خفیف جهاز تنفسی و بی‌نظمی عادت ماهانه استفاده می‌کنند و در استعمال خارجی برای بیماری‌های پوست، سردرد و گوش‌درد به کار می‌رود [فورتادو]. از شیره گیاه مانند روغن مالیدنی در موارد روماتیسم استفاده می‌شود.
در اندونزی از برگهای معطر گیاه در آب گرم حمام ریخته و به عنوان مسکن و خنک‌کننده برای آرامش اعصاب استفاده می‌شود. ضمنا به‌طور کمپرس روی اعضای ورم‌کرده می‌گذارند. از جوشانده ریشه و برگهای گیاه داروی مخصوصی برای معالجه سوزاک درست می‌کنند.
در هندوستان از برگهای آن به‌منزله داروی نرم‌کننده سینه و از شیره برگهای آن به عنوان تب‌بر و معرق و محرک و داروی سینه در مورد نزله و برونشیت استفاده می‌شود و چند قطره از آن را در گوش برای رفع گوش‌درد می‌ریزند. از دم‌کرده برگهای آن برای تقویت معده در موارد اختلالات گوارشی بچه‌ها و در مورد ناراحتی‌های کبدی استفاده می‌شود.
گرد برگهای خشک آن را در موارد بیماری اوزنا[168] (آماس غشای مخاطی بینی که همراه با دفع آب بینی بدبو و متعفن است) در داخل بینی می‌پاشند. تخم لعابدار و نرم کننده آن را در موارد اختلالات مجاری ادرار و تناسلی می‌خورند.
جوشانده ریشه گیاه را به عنوان معرق در موارد تبهای مالاریایی می‌خورند. برگها و ساقه‌های تازه آن را له کرده و روی محل گزش پشه می‌گذارند و از اسانس آن به عنوان ضدعفونی‌کننده و حشره‌کش و فراردهنده حشره بویژه در موارد شروع بیماری تیفوس استفاده می‌شود و ضد باسیلوس تایفوزوس 169] است.

جم اسفرم

اشاره

گونه دیگری از ریحان که در کتب طب سنتی بنام «جم اسپرم» و «جم اسفرم» و «ریحان سلیمان» نامیده می‌شود «جم- سلیمان و ریحان- اسفرم» (برهان- معین) گیاهی است هندی نام علمی آن‌Ocimum gratissimum L . می‌باشد. به هندی‌Ramtuisi گفته می‌شود. گیاهی است چندساله به شکل بوته. بلندی آن 2 متر و پایین ساقه‌های آن چوبی است.
در مورد رویش آن در ایران تا به حال گزارشی فنی از گیاه‌شناسان نداریم. در

مخزن الادویه آمده است که این گیاه جم اسفرم در کوهستانات فارس و اصفهان می‌روید (قابل توجه گیاه‌شناسان) و در اغلب مدارک فنی قدیم آمده است که گیاه آن چندساله و پیچنده است و به گیاهان مجاور می‌پیچد (صیدنه).
از نظر ترکیبات شیمیایی در اسانس آن وجود مواد اوسی‌من و کادی‌نن 170] و یک‌ترپن الکل 171] که به صورت پری‌لیل الکل 172] مشخص شده، تأیید شده است [یه .
در گزارش دیگری مندرج درG .I .M .p آمده است که گیاه جم اسفرم(O .gratissimum) دارای اسانس تیمول، اوژنول و متیل چاویکول است. در اسانس آن وجود اوژنول و تیمول مشخص شده است. برگها و شکوفه‌های آن در حدود 70 درصد اوژنول، 8/ 7 درصد میرسن 173]، 30- 20 درصد مونوسیکلیک‌ترپن 174] دارد. در برگها و شاخه‌های نرم آن 1/ 0 درصد اسانس است که شامل 66 درصد سیترال، 25 درصد ژرانیول 175] و 8/ 2 درصد سیترونلول 176] می‌باشد.

خواص- کاربرد

در هندوچین از جم اسفرم به مثابه مقوی معده و تب‌بر و نرم‌کننده سینه استفاده می‌شود [شوالیه، دولانسان، پروت و هریر، پتلو]. در شبه‌جزیره مالایا از تخم آن به عنوان ملین و داروی معالج سوزاک استفاده می‌شود [فورتادو، هولمز و ریدلی .
در هندوستان از این گیاه معطر به صورت آب حمام یا از دود و بخور آن برای معالجه روماتیسم و فلج استفاده می‌شود. جوشانده غلیظ آن برای معالجه آفتا[177] با برفک در بچه‌ها مؤثر است.
جوشانده برگهای آن برای معالجه سوزاک و رفع ضعف اسپرم و تخم آن را برای معالجه سردرد و سایر دردهای عصبی می‌خورند.

بادروج

به فرانسه‌Grand basilc وBasilic blanc و به فارسی «ریحان کوهی» و «بادروج» گویند در شرح اسما آمده است که بادروج معرب بادروز فارسی است و در کتب طب سنتی «بادروج ابیض» نیز آمده است. نام علمی آن:Ocimum album L . می‌باشد و عده‌ای از گیاه‌شناسان آن را از مترادفهای‌O .basilicum می‌دانند. تخم این گیاه در ایران به تخم شربتی مشهور است.
گیاه شبیه ریحان است برگهای آن ریزتر، ساقه آن مربع‌شکل، گل آن مایل به سرخی، اسانس آن کمتر از ریحان و تخم آن ریزتر از تخم ریحان پرورشی است ولی همان‌طور سیاه است تخم آن را تخم شربتی نامند زیرا معمول است قبل از خوردن در شربت قند می‌ریزند و چند دقیقه‌ای می‌گذارند که متورم شود و مصرف می‌کنند. محل رویش آن در ایران همان نقاطی است که گونه‌O .basilicum می‌روید.

ریحان (درمتون طب سنتی حماحم، حبق نبطی، حبق لیمونی، پودینه بستانی)، تخم شربتی (نام علمی: Ocimum basilicum) نام گیاهی یک‌ساله از تیره نعناعیان است که آن را در فارسی «شاهِسپَرَم» و «شاهسپرغم»[۱] و نازبو[۲] نیز گفته‌اند. برگ‌های معطرش را خام می‌خورند، و لعاب دانه‌های سیاهش برای نرم کردن دست به کار می‌رود. در دو نوع سبز و بنفش وجود دارد.این سبزی بیشتر به عنوان سبزی خوردن استفاده می شود.دانه آن برای معده درد نیز مفید فایده است

تخم ریحان (تخم شربتی)
تخم شربتی نام دانه ریحان است که برای تهیه شربت به کار می‌رود.[نیازمند منبع]
دانه هاي چيا با بذر گياه ريحان (تخم شربتي) تفاوت داشته و هر كدام خاصيت جداگانه اي دارند. در ايران تخم شربتي از قديم در نوشيدني هاي خنك براي بر طرف كردن عطش در فصل تابستان استفاده مي شود. گاهي تخم شربتي به اشتباه بعنوان دانه هاي چيا خريداري شده و مورد استفاده قرار مي گيرد، و يا خواص مربوط به دانه هاي چيا به تخم شربتي كه در ايران فراوان است نسبت داده مي شود كه درست نيست.[نیازمند منبع]

به عربی ریحان ملکی، حبق:
الريحان الملكي أو الريحان أو الحبق هو نبات عطري يتبع الفصيلة الشفوية. يدخل في تحضير الحساء والسلطات وتحسين نكهة الشاي. وأما زيته فيدخل في صناعة العطور والمشروبات.

الوصف النباتي[عدل]
أوراق نباتية عطرية. كان الأوروبيون في القرن 17 يستعملون الريحان لعلاج نزلة البرد والثآليل والبثور والديدان المعوية.وفي الهند يستعمل الريحان ضد البكتريا فوق الجسم وزيته يعالج حب الشباب ويخفف آلام الروماتيزم وبه مواد ضد السرطانات لأنها تنشط جهاز المناعة بزيادة الأجسام المضادة 20%. وبه مضادات أكسدة وفيتامين ج وفيتامين A يحميان تلف الخلايا. ومغلي أوراق الريحان يعالج الالتهاب الرئوي ونزلات البرد ويفيد في حمي الملاريا.
يجدر بالذكر ان الريحان يتمتع برائحة عطرية ويشتهر استخدامه من قبل النساء في الخليج العربي كعطر ويطلق عليه اسم (المشموم) وكان يتغنى به في ابيات الشعر الشعبي.و يزرع الريحان بكثرة منطقة حلي بمحافظة القنفذة التابعة لمنطقة مكة المكرمة وكذلك على امتداد الساحل الغربي لشبه الجزيرة العربية.
يستفاد من بذور الريحان لعمل شربات البلنكو المحلى بالسكر والمطعم بماء الورد والهيل.

الفوائد الصحية للريحان[عدل]
يحتوى الريحان على فيتامين A وفيتامين C بجانب عناصر الحديد والكالسيوم كالسيوم والبوتاسيوم بوتاسيوم والماغنسيوم مغنسيوم.
إحتواء الريحان على عنصر الماغنسيوم يساعد أيضاً على حماية القلب قلب من الأزمات حيث يحث العضلات والأوعية الدموية على الإرتخاء وتحسن إندفاع الدم دم وتقليل خطورة عدم الإنتظام فى إيقاع القلب أو تقلصات العضلات والأوعية الدموية.
يعتبر الريحان مصدراً جيداً لفيتامين A فيتامين ألف وذلك لاحتوائه على تركيز عالي من الكاروتينات كاروتينات Carotenoids وأهمها بيتا كاروتين beta-caroten والذي يطلق عليه Pro-vitamin A حيث يمكنها التحول إلى فيتامين A ومعروف أن البيتا كاروتين مضاد أكسدة أقوى من فيتامين A نفسه فلا يتوقف فعله على حماية الطبقات المبطنة epithelial cells للعديد من تراكيب الجسم بدن بما فى ذلك الأوعية الدموية من تأثير الشوارد الحرة المدمرة ولكنها أى beta-carotene تقوم أيضاً بمنع الشوارد الحرة Free-radicals من العمل.
فوائده للجسم[عدل]
تستخدم أوراق الريحان كمطهر عام ضد الجراثيم والبكتيريا، وتحتوي على العديد من الخصائص العلاجية مثل:[1]
التخلّص من البلغم، والتهابات الجسم، والجروح والحروق، وكما تستعمل لتقوية الجهاز الهضمي والتخلّص من التعب العام والإرهاق.
يستخدم الريحان كعلاج للحمى، وذلك بغلي أوراقه في الماء مع الحليب والسكر، ثم عمل كمّادات للجسم لمدّة ثلاث ساعات.
يستخدم كعلاج لالتهاب الحلق ولنزلات البرد والسعال؛ وذلك بشرب مغلي الأوراق.
يستخدم لعلاج اللدغات والعضّات التي قد تتعرّض لها من الحشرات السامة.
يستخدم لتهدئة الجهاز الهضمي وعلاج حالات القيء الشديدة بخلط عصيره مع عصير الزنجبيل والعسل.

زيت الريحان من أهم الزيوت التى تمتاز بالعديد من الفوائد الصحية والعلاجية، وسمى بالريحان لأنّه يعمل على إراحة النفس، بالإضافة إلى ذلك فإنّه أطلق عليه اسم الريحان المقدس لأنّه يستخدم فى الكنائس الأرثوذوكسية فى تحضير الماء المقدس، ويوجد أكثر من 60 نوعًا من الريحان حول العالم، ويستخدم فى العديد من الوصفات كنوع من نكهات الطعام. له فوائد عديدة، منها:[2]
- يستخدم زيت الريحان لعلاج مشاكل البشرة مثل حب الشباب، ويمكن وضع بعض القطرات القليلة فقط على قطعة من القطن ودهن الحب الموجود على البشرة.
- يعمل على الشعور بالاسترخاء، وتخليص الجسم من التعب والإرهاق، ويمكن إضافة بعض القطرات من الزيت لماء الاستحمام لتعطير الجسم.
- يمكن وضع بعض قطرات زيت الريحان في موقد زيتي لتعطير الجو، وتلك هي أفضل الطرق للشعور بالانتعاش والحيوية.
- يساعد فى علاج انتفاخ البطن، ويكون ذلك بمزجه مع نوع آخر من الزيوت الأساسية والقيام بتدليك مكان الألم به، ويخلص الجسم من البكتيريا.
- ينصح بتناوله للمرأة بعد الولادة للمساعدة على عودة الرحم إلى طبيعته.
- يساعد على التئام الجروح عن طريق استخدامه ككمادات.
- يفيد جداً فى حالات الربو والتهاب القصبة الهوائية، وذلك عن طريق مزج 10 نقاط من زيت الريحان مع عشرة مل من زيت اللوز أو زيت دوار الشمس.
- يدخل فى صناعة العديد من أنواع العطور، ويعتبر فاتحاً للشهية ومنشطاً لإفراز المعدة.
- يساعد فى التخلص من حالات التشنج سريعاً.

Basil UK /ˈbæzəl/;[1] US /ˈbeɪzəl/[2] (Ocimum basilicum), also called great basil or Saint-Joseph's-wort, is a culinary herb of the family Lamiaceae(mints). It is also called the "king of herbs" and the "royal herb". The name "basil" comes from Greek βασιλικόν φυτόν (basilikón phutón), "royal/kingly plant".[3]
Basil is possibly native to India,[4] and has been cultivated there for more than 5,000 years.[5] It was thoroughly familiar to the Greek authors Theophrastus[6] and Dioscorides. It is a hardy annual plant, best known as a culinary herb prominently featured in Italian cuisine, and also plays a major role in Southeast Asian cuisines of IndonesiaThailandMalaysiaVietnamCambodiaLaos, and Taiwan. Depending on the species and cultivar, the leaves may taste somewhat like anise, with a strong, pungent, often sweet smell.
There are many varieties of Ocimum basilicum, as well as several related species or species hybrids also called basil. The type used in Italian food is typically called sweet basil (or Genovese basil), as opposed to Thai basil (O. basilicum var. thyrsiflora), lemon basil (O. × citriodorum), and holy basil (Ocimum tenuiflorum), which are used in Asia. While most common varieties of basil are treated as annuals, some are perennial in warm, tropical climates, including holy basil and a cultivar known as "African blue basil".

Etymology[edit]
The word basil comes from the Greek βασιλεύς (basileus), meaning "king",[7] as it has come to be associated with the Feast of the Cross commemorating the finding of the True Cross by St. Helena, mother of the emperor Constantine I.[8] The herbalist John Gerard noted that those stung by scorpions would feel no pain if they ate of basil,[9] and Nicholas Culpepernoted of basil that it was "an herb of Mars and under the Scorpion, and therefore called Basilicon",[10] relating it to basilisk. The Oxford English Dictionary quotes speculations that basil may have been used in "some royal unguent, bath, or medicine". Basil is still considered the "king of herbs" by many cookery authors.[11]

Basil is most commonly used fresh in cooked recipes. In general, it is added at the last moment, as cooking quickly destroys the flavor. The fresh herb can be kept for a short time in plastic bags in the refrigerator, or for a longer period in the freezer, after being blanched quickly in boiling water. The dried herb also loses most of its flavor, and what little flavor remains tastes very different, with a weak coumarinflavor, like hay.
Basil is one of the main ingredients in pesto—a green Italian oil-and-herb sauce.
The most commonly used Mediterranean basil cultivars are "Genovese", "Purple Ruffles", "Mammoth", "Cinnamon", "Lemon", "Globe", and "African Blue". The Chinese also use fresh or dried basils in soups and other foods. In Taiwan, people add fresh basil leaves to thick soups (Chinese羹湯pinyingēngtāng). They also eat fried chicken with deep-fried basil leaves. Basil (most commonly Thai basil) is commonly steeped in cream or milk to create an interesting flavor in ice cream or chocolates (such as truffles). The leaves are not the only part of basil used in culinary applications, the flower buds have a more subtle flavor and they are edible.
Thai basil is also a condiment in the Vietnamese noodle soup, phở.
Seeds[edit]
When soaked in water, the seeds of several basil varieties become gelatinous, and are used in Asian drinks and desserts such as faludasharbat-e-rihan, or hột é.

Several other basils, including some other Ocimum species, are grown in many regions of Asia. Most of the Asian basils have a clove-like flavor that is, in general, stronger than the Mediterranean basils. The most notable is the holy basil or tulsi, a revered home-grown plant in India and Nepal. In China, the local cultivar is called (Chinese九層塔pinyinjiǔ céng tǎ; literally: "nine-level pagoda"), while the imported varieties are called (Chinese羅勒pinyinluó lè) or (Chinese巴西里pinyinbā xī lǐ), although [巴西里] often refers to a different plant—parsley.
Lemon basil has a strong lemony smell and flavor very different from those of other varieties because it contains a chemical called citral. It is widely used in Indonesia, where it is called kemangi and served raw, together with raw cabbagegreen beans, and cucumber as an accompaniment to fried fish or duck. Its flowers, when broken up, are a zesty salad condiment.
Chemical components[edit]
The various basils have such different scents because the herb has a number of different essential oils that come together in different proportions for various breeds. The strong clove scent of sweet basil is derived from eugenol, the same chemical as actual cloves.[15] The citrus scent of lemon basil and lime basil reflects their higher portion of citral, which causes this effect in several plants including lemon mint, and of limonene, which gives actual lemon peel its scent. African blue basil has a strong camphor smell because it contains camphor and camphene in higher proportions. Licorice basil contains anethole, the same chemical that makes anise smell like licorice, and in fact is sometimes called "anise basil."

Most culinary and ornamental basils are cultivars of the species Ocimum basilicum, but other species are also grown and there are many hybrids between species. Traditionally a green plant, some varieties, such as 'Purple Delight' have leaves that appear purple.[24]
Basil grows between 30–130 cm (12–51 in) tall, with opposite, light green, silky leaves3–11 cm (1.2–4.3 in) long and 1–6 cm (0.39–2.36 in) broad. The flowers are small, white in color and arranged in a terminal spike. Unusual among Lamiaceae, the four stamens and the pistil are not pushed under the upper lip of the corolla, but lie over the inferior lip. After entomophilous pollination, the corolla falls off and four round achenesdevelop inside the bilabiate calyx.
Basil is very sensitive to cold, with best growth in hot, dry conditions. It behaves as an annual if there is any chance of a frost. In Northern Europe, Canada, the northern states of the U.S., and the South Island of New Zealand it will grow best if sown under glass in a peat pot, then planted out in late spring/early summer (when there is little chance of a frost).[25] Additionally, it may be sown in soil once chance of frost is past. It fares best in a well-drained sunny spot.
Although basil grows best outdoors, it can be grown indoors in a pot and, like most herbs, will do best on an equator-facing windowsill. It should be kept away from extremely cold drafts, and grows best in strong sunlight, therefore a greenhouse or row cover is ideal if available. It can, however, be grown even in a basement, under fluorescent lights.
If its leaves have wilted from lack of water, it will recover if watered thoroughly and placed in a sunny location. Yellow leaves towards the bottom of the plant are an indication that the plant has been stressed; usually this means that it needs less water, or less or more fertilizer.
In sunnier climates such as Southern Europe, the southern states of the U.S., the North Island of New Zealand, and Australia, basil will thrive when planted outside. It also thrives over the summertime in the central and northern United States, but dies out when temperatures reach freezing point. It will grow back the next year if allowed to go to seed. It will need regular watering, but not as much attention as is needed in other climates.
Basil can also be propagated very reliably from cuttings with the stems of short cuttings suspended for two weeks or so in water until roots develop.
Once a stem produces flowers, foliage production stops on that stem, the stem becomes woody, and essential oil production declines. To prevent this, a basil-grower may pinch off any flower stems before they are fully mature. Because only the blooming stem is so affected, some stems can be pinched for leaf production, while others are left to bloom for decoration or seeds.
Once the plant is allowed to flower, it may produce seed pods containing small black seeds, which can be saved and planted the following year. Picking the leaves off the plant helps promote growth, largely because the plant responds by converting pairs of leaflets next to the topmost leaves into new stems.
Companion planting[edit]
Basil is popularly recommended as a companion plant to the tomato. Common claims are that basil may deter pests or improve tomato flavor. In double-blind taste tests, basil did not significantly affect the taste of tomatoes when planted adjacent to them.[26][27]
Diseases[edit]
Basil suffers from several plant pathogens that can ruin the crop and reduce yieldFusarium wilt is a soil-borne fungal disease that will quickly kill younger basil plants. Seedlings may also be killed by Pythium damping off.
A common foliar disease of basil is gray mold caused by Botrytis cinerea; it can also cause infections post-harvest and is capable of killing the entire plant. Black spot can also be seen on basil foliage and is caused by the fungi genusColletotrichum.
More recently, downy mildew of basil caused by Peronospora belbahrii has been a huge problem for both commercial producers and home growers. The disease was first reported in Italy in 2004,[28] and was also reported in the U.S. in 2007 and 2008[29][30] and has been steadily increasing in prevalence, distribution, and economic importance since then.

The French sometimes call basil "l'herbe royale" ("royal herb"),[34] while in Welsh it has the synonymous name "brenhinllys".[35][36] Jewish folklore suggests it adds strength while fasting.[37] In Portugal, dwarf bush basil is traditionally presented in a pot, together with a poem and a pom-pom, to a sweetheart, on the religious holidays of Saint John and Saint Anthony. However, basil represented hatred in ancient Greece, and European lore sometimes claims that basil is a symbol of Satan.[38] African legend claims that basil protects against scorpions, while the English botanist Culpepercites one "Hilarius, a French physician" as affirming it as common knowledge that smelling basil too much would breed scorpions in the brain.
Holy basil, also called tulsi, is highly revered in Hinduism.
Basil has religious significance in the Greek Orthodox Church, where it is used to sprinkle holy water.[39] The Bulgarian Orthodox ChurchSerbian Orthodox ChurchMacedonian Orthodox Church and Romanian Orthodox Church use basil (Bulgarian and Macedonian: босилекRomanianbusuiocSerbianбосиљак) to prepare holy water and pots of basil are often placed below church altars.[40]
In Europe, basil is placed in the hands of the dead to ensure a safe journey.[41] In India, they place it in the mouth of the dying to ensure they reach God.[42] The ancient Egyptians and ancient Greeks believed it would open the gates of heaven for a person passing on.[43]
In Boccaccio's Decameron a memorably morbid tale (novella V) tells of Lisabetta, whose brothers slay her lover. He appears to her in a dream and shows her where he is buried. She secretly disinters the head, and sets it in a pot of basil, which she waters with her daily tears. The pot being taken from her by her brothers, she dies of her grief not long after. Boccaccio's tale is the source of John Keats' poem Isabella or The Pot of Basil – which in turn inspired the paintings Isabella (Millais painting) and Isabella and the Pot of Basil. A similar story is told of the Longobard queen, Rosalind.
In certain central regions of Mexico, basil is used to draw fortune by hanging a bunch of the plant in the door or window of the shop. The plant's growth reflects the wealth of the business, showing how dutifully the owner cares for his shop and the herb.
